From 1990, Matthieu and Sylvanie Bouchet took over the 6 ha family winery located at the place called La Salle in Saumur. Matthieu’s father, François Bouchet, is a forerunner in biodynamy and his winery was converted to biodynamic farming in 1962. Matthieu and Sylvanie chose to go on François’s work and to preserve family values, like in a farm, to live in harmony with seasons, in a protected area and surrounded with nature and animals. They make their wines for those who have the chance to drink them, their goal is to bring pleasure, even if some years are more difficult than others. Clay-limestone soils. Wines are aged in oak barrels in a tuffeau cellar (this freestone was also used to build Les Châteaux de la Loire). All the grape varieties are vinified and bottled at the winery.
