vinification: Harvested by hand on 16th November 1999, only 10% yield from the regulary, produced primarily from naturally shrivelled, overripe grapes with noble rot, destemmed, unadorned, skin contact of 3 hours, carefully pressed, spontaneous fermentation, no yeast added, maturation in small oak barrels.
